HOLIDAY SNOWBALLS

Combine cream cheese, dried fruit, coconut and pecans to make these no-bake Christmas treats. Serve them with sugar cookies or gingersnaps as part of a holiday cookie tray.

Yield: Makes 2 balls.

HOLIDAY SNOWBALLS

Ingredients

  • 8 oz (250 g) cream cheese, softened
  • 1/2 cup salted butter, softened
  • 1/4 cup icing sugar
  • 1 tsp vanilla
  • 1/3 cup dried blueberries or chopped dried cherries
  • 1/3 cup chopped toasted pecans
  • 3/4 cup flaked coconut
  • Sugar cookies or gingersnaps*

Directions

  1. Using medium speed of an electric mixer, beat together cream cheese and butter until fluffy.
  2. Beat in icing sugar and vanilla. Stir in blueberries and pecans.
  3. Refrigerate mixture until firm enough to handle.
  4. Shape mixture into two balls. Roll balls in coconut.
  5. Wrap and refrigerate for at least 4 hours or up to 4 days. May be frozen for up to 1 month. Serve with sugar cookies.
