HOLIDAY SNOWBALLS
Combine cream cheese, dried fruit, coconut and pecans to make these no-bake Christmas treats. Serve them with sugar cookies or gingersnaps as part of a holiday cookie tray.
Yield: Makes 2 balls.

HOLIDAY SNOWBALLS
Ingredients
- 8 oz (250 g) cream cheese, softened
- 1/2 cup salted butter, softened
- 1/4 cup icing sugar
- 1 tsp vanilla
- 1/3 cup dried blueberries or chopped dried cherries
- 1/3 cup chopped toasted pecans
- 3/4 cup flaked coconut
- Sugar cookies or gingersnaps*
Directions
- Using medium speed of an electric mixer, beat together cream cheese and butter until fluffy.
- Beat in icing sugar and vanilla. Stir in blueberries and pecans.
- Refrigerate mixture until firm enough to handle.
- Shape mixture into two balls. Roll balls in coconut.
- Wrap and refrigerate for at least 4 hours or up to 4 days. May be frozen for up to 1 month. Serve with sugar cookies.
