Honey and Za'atar Glazed Carrots

Zaatar, a Middle Eastern spice blend, works well here with the sweetness of carrots, honey, and the citrus notes of the lemon zest.

Honey and Za'atar Glazed Carrots

Ingredients

  • 1 bunch carrots with 2-inch tops (about 325g)
  • 1/4 cup liquid honey
  • 3 tbsp olive oil
  • 1 tbsp Za’atar Seasoning (link below)
  • Pinch kosher salt
  • Pinch freshly ground pepper
  • 1/3 cup yogurt
  • Zest of 1 lemon

Directions

  1. Preheat oven to 425°F.
  2. Scrub carrots well or peel if necessary, then halve lengthwise. Combine honey, oil, za’atar, salt, and pepper in a medium bowl, mixing well. Add carrots and toss to coat.
  3. Place a wire rack onto a baking sheet then transfer carrots to rack.
  4. Roast carrots until golden and tender, 15 - 20 minutes depending on thickness of carrots.
  5. Spread yogurt onto a serving platter with the back of a spoon. Arrange carrots over yogurt, then top with lemon zest.
  6. Serve immediately.

Tip:

Look for colourful heirloom carrots when available!

If the carrots are fresh and tender they don’t need to be peeled; just clean well with a vegetable brush.
