IRISH CREAM TRUFFLES

Irish cream liqueur gives a distinctive flavour to these rich chocolate truffles. These are quick and easy to make, thanks to the help of a can of store-bought frosting.

Yield: Makes 6 dozen.

IRISH CREAM TRUFFLES

Ingredients

  • 16 oz (448 g) semi-sweet chocolate, chopped
  • 1 can (450 g) creamy dark chocolate frosting
  • 1/4 cup Irish cream liqueur
  • Cocoa or finely chopped pecans*

Directions

  1. Melt chocolate in top of a double boiler over hot, not simmering, water. Remove from heat; cool slightly.
  2. Stir in frosting and liqueur. Cover and refrigerate until firm, about 2 hours.
  3. Shape into 1 inch balls. Roll in cocoa.
  4. Store truffles, layered with wax paper, in an airtight container in refrigerator for up to 2 weeks or freeze for up to 2 months.
