Jiffy Eggs
When mornings are a scramble to get ready for work or school, try these nutritious breakfast eggs, a perfect solution because they are ready to eat - in a jiffy!

Jiffy Eggs
Ingredients
- 1 slice bread (white, brown or whole wheat)
- 1 thin round slice deli ham
- 1 large egg
- Salt and freshly ground pepper*
- 1 tbsp shredded cheddar, mozzarella or Monterey Jack cheese
- Salsa, tomato slice or ketchup, optional*
Directions
- Press bread into a generously greased heatproof custard cup or ramekin, forming a bread cup. Press ham into custard cup.
- Crack egg on top of ham. Carefully poke egg all over with a fork. Season to taste with salt and pepper. Sprinkle cheese over egg.
- Microwave on high until egg is set, about 1 – 2 minutes. Top with salsa, tomato slice or ketchup.
