Jiffy Eggs

When mornings are a scramble to get ready for work or school, try these nutritious breakfast eggs, a perfect solution because they are ready to eat - in a jiffy!

Yield: Serves 1

Jiffy Eggs


  • 1 slice bread (white, brown or whole wheat)
  • 1 thin round slice deli ham
  • 1 large egg
  • Salt and freshly ground pepper*
  • 1 tbsp shredded cheddar, mozzarella or Monterey Jack cheese
  • Salsa, tomato slice or ketchup, optional*


  1. Press bread into a generously greased heatproof custard cup or ramekin, forming a bread cup. Press ham into custard cup.
  2. Crack egg on top of ham. Carefully poke egg all over with a fork. Season to taste with salt and pepper. Sprinkle cheese over egg.
  3. Microwave on high until egg is set, about 1 – 2 minutes. Top with salsa, tomato slice or ketchup.
