KALE SALAD WITH ORANGES AND SUNFLOWER SEEDS

Hardy kale can handle a lot of salad add-ins, like the generous amount of oranges, goat cheese and sunflowers in this healthy recipe. The added orange in the dressing really brightens up the salad.

KALE SALAD WITH ORANGES AND SUNFLOWER SEEDS

Ingredients

  • ​1 pkg (5 oz/142 g) baby kale
  • 2 cups thinly sliced kale
  • 2 medium navel oranges, peeled, sectioned and chopped
  • 1/4 cup crumbled soft goat cheese
  • 1/4 cup diced red onion
  • 1/4 cup sunflower seeds, toasted
  • 2 tbsp fresh orange juice
  • 2 tsp liquid honey
  • 1 tsp balsamic vinegar
  • 1 tsp sherry vinegar
  • 1 tsp Dijon mustard
  • 1 tsp grated orange peel
  • 1 clove garlic, finely chopped
  • Pinch salt
  • 1/4 cup canola oil
  • 1 tbsp sunflower seeds, toasted and chopped

Directions

  1. Combine baby kale, kale, oranges, cheese, red onion and 1/4 cup sunflower seeds in a bowl; set aside.
  2. To prepare dressing, whisk together orange juice, honey, balsamic vinegar, sherry vinegar, mustard, orange peel, garlic and salt until combined. Gradually whisk in oil until blended. Stir in 1 tbsp chopped sunflower seeds.
  3. Add dressing to kale mixture and toss to coat. Serve immediately.
