KALE SALAD WITH ORANGES AND SUNFLOWER SEEDS
Ingredients
- 1 pkg (5 oz/142 g) baby kale
- 2 cups thinly sliced kale
- 2 medium navel oranges, peeled, sectioned and chopped
- 1/4 cup crumbled soft goat cheese
- 1/4 cup diced red onion
- 1/4 cup sunflower seeds, toasted
- 2 tbsp fresh orange juice
- 2 tsp liquid honey
- 1 tsp balsamic vinegar
- 1 tsp sherry vinegar
- 1 tsp Dijon mustard
- 1 tsp grated orange peel
- 1 clove garlic, finely chopped
- Pinch salt
- 1/4 cup canola oil
- 1 tbsp sunflower seeds, toasted and chopped
Directions
- Combine baby kale, kale, oranges, cheese, red onion and 1/4 cup sunflower seeds in a bowl; set aside.
- To prepare dressing, whisk together orange juice, honey, balsamic vinegar, sherry vinegar, mustard, orange peel, garlic and salt until combined. Gradually whisk in oil until blended. Stir in 1 tbsp chopped sunflower seeds.
- Add dressing to kale mixture and toss to coat. Serve immediately.
