KEFTA

Kefta is a traditional Middle Eastern skewer. Make them by shaping a mixture of ground beef, herbs and spices around skewers and grilling them until crispy. Serve with tzatziki for dipping.

Ingredients

  • 12 bamboo skewers
  • 1 lb (0.5 kg) lean ground beef
  • 3 tbsp chopped fresh cilantro
  • 2 tbsp chopped fresh mint
  • 2 cloves garlic, crushed
  • 1 tsp ground coriander
  • 1 tsp cumin
  • 1 tsp paprika
  • 1/2 tsp oregano, crumbled
  • 1/2 tsp salt
  • 1/4 tsp ground ginger
  • 1/8 tsp allspice

Directions

  1. Soak bamboo skewers in hot water for 30 minutes.
  2. Preheat natural gas barbecue on medium heat for 10 - 15 minutes. Meanwhile, combine beef with all remaining ingredients. Divide mixture into 12 equal portions.
  3. To prepare kefta, shape each portion around the pointed end of a bamboo skewer, forming a sausage-shaped log that is about 3 inches long and 1 inch thick.
  4. Grill kefta over medium heat on natural gas barbecue, turning occasionally, until browned and completely cooked, about 10 minutes.
