KEFTEDES WITH LEMON SAUCE

Keftede are Greek-style meatballs made with beef, lamb, mint and onions. Serve them with our dilly lemon sauce as an appetizer or over rice as an entrée.

Yield: Makes 4 dozen.

KEFTEDES WITH LEMON SAUCE

Ingredients

  • 1 lb (0.5 kg) lean ground beef
  • 1 cup finely chopped onion
  • 3/4 cup fine dry bread crumbs
  • 2 large eggs, lightly beaten
  • 1/4 cup chopped fresh parsley
  • 1 clove garlic, crushed
  • 1 tbsp mint, crumbled
  • 1 tsp oregano, crumbled
  • 1/2 tsp salt
  • 1/4 tsp cinnamon
  • 1/4 tsp freshly ground nutmeg
  • Lemon Sauce*

Directions

  1. Preheat oven to 375°F.
  2. Combine all ingredients except Lemon Sauce until well blended. Shape mixture into small balls. Place meatballs on a rack in a shallow pan.
  3. Bake at 375°F for 35 - 40 minutes or until completely cooked. Cooked meatballs may be refrigerated for up to 24 hours or frozen for up to 1 month.
  4. Combine hot meatballs with Lemon Sauce.

LEMON SAUCE

Ingredients

  • 2 tsp cornstarch
  • 1 tsp dill weed
  • 1/4 tsp salt
  • 1 can (10 oz/284 mL) chicken broth
  • 3 tbsp lemon juice

Directions

  1. Combine cornstarch, dill weed and salt in a medium saucepan. Gradually stir in chicken broth and lemon juice.
  2. Bring to a boil over medium heat, stirring frequently. Boil for 1 minute, stirring constantly. Use immediately. Do not freeze.
