LEBANESE BURGERS

If you like falafel or shawarma, this is the burger for you. Spiced beef mini-patties are stuffed into pitas and then dressed with Minted Yogurt Sauce.

Yield: Serves 6.

LEBANESE BURGERS

Ingredients

  • 1 1/2 lb (0.75 kg) lean ground beef
  • 1/2 cup chopped fresh parsley
  • 1/4 cup finely chopped red onion
  • 1 tsp cinnamon
  • 1 tsp cumin
  • 1 tsp paprika
  • 1 tsp salt
  • 1/2 tsp cayenne pepper
  • 3 pita bread, halved
  • Minted Yogurt Sauce*
  • Shredded lettuce*

Directions

  1. Combine first 8 ingredients (beef through cayenne pepper). Shape mixture into 6 oval patties.
  2. Grill patties over medium heat on natural gas barbecue until completely cooked. Serve in pita halves with Minted Yogurt Sauce and lettuce.

MINTED YOGURT SAUCE

Ingredients

  • 3/4 cup diced seeded Roma tomatoes
  • 1/2 cup diced seeded English cucumber
  • 1/2 cup yogurt
  • 2 tbsp slivered fresh mint
  • 1 clove garlic, finely chopped
  • 1/8 tsp salt

Yield: Makes about 1 1/2 cups.

Directions

  1. Combine all ingredients. Cover and refrigerate for up to 1 hour.
