LEMON GARLIC CAULIFLOWER FLORETS

​Spices like cumin and smoked paprika may be unusual ingredients to find on your holiday menu, but we love the diversity and contrasting flavours they bring to the table. This side dish goes wonderfully with any special occasion roast dinner.

Yield: Makes about 6 cups​.

LEMON GARLIC CAULIFLOWER FLORETS

Ingredients

  • ​3 tbsp canola oil
  • 2 tbsp fresh lemon juice
  • 4 cloves garlic, bruised
  • 1 tsp salt
  • 1/2 tsp freshly ground pepper
  • 1 tsp mustard powder
  • 1 tsp ground coriander
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 12 cups cauliflower florets

Directions

  1. ​Preheat oven to 450°F.
  2. Combine oil, lemon juice, garlic, salt, pepper and spices in a large bowl. Add cauliflower and toss to coat.
  3. Transfer florets to a foil-lined baking sheet. Bake for 20 minutes. Flip florets and continue to bake until florets are tender, but not mushy, about 15 minutes.
