LEMON SCENTED ORZO

Orzo is a kind of pasta that resembles grains of rice. This side dish, flavoured with lemon and parsley, goes well with Italian-style meat dishes.

LEMON SCENTED ORZO

Ingredients

  • 2 tbsp extra-virgin olive oil
  • 2 cloves garlic, finely chopped
  • 1 tsp grated lemon peel
  • 1/4 tsp salt
  • 1/4 tsp freshly ground pepper
  • 1/2 cup chopped fresh parsley
  • 2 tbsp fresh lemon juice
  • 1 1/3 cups orzo, cooked and drained

Directions

  1. Heat oil in a small frypan over medium heat. Stir in garlic, lemon peel, salt and pepper.
  2. Cook, stirring, for 1 minute.
  3. Add garlic mixture, parsley and lemon juice to hot cooked orzo; toss to combine. Serve immediately.
