Loaded Mashed Potatoes

We took all your favourite fixings from a steak house-baked potato - sour cream, onion, cheese and bacon - and loaded them into these mashed potatoes. Pair this quick and delicious side dish with your favourite beef or chicken dish for the ultimate comfort food.

Loaded Mashed Potatoes

Ingredients

  • 6 cups cubed peeled potatoes
  • 3 cloves garlic, peeled
  • 1 cup sour cream
  • 2 tbsp salted butter
  • 1/2 tsp freshly ground pepper
  • 1/2 tsp salt
  • 1 1/2 cups shredded cheddar cheese
  • 1/2 cup chopped green onions
  • 4 slices bacon, cooked and crumbled

Directions

  1. Cook potatoes and garlic in boiling water until tender; drain.
  2. Squeeze potatoes and garlic through a potato ricer and return to saucepan; keep potato mixture warm. Alternatively, mash with a potato masher until smooth.
  3. Stir in sour cream, butter, salt and pepper, until butter is melted.
  4. Stir in cheese, green onions and bacon until combined.

Tip: You can use an electric mixer instead of ricing or mashing. Using low speed, beat potato mixture with sour cream, butter, pepper and salt for 1 minute or just until smooth, then stir in cheese, green onions and bacon. Do not overmix as the potatoes can become gluey.
