Low Fat Citrus and Peppercorn Vinaigrette

This bright low-fat vinaigrette goes great on a variety of different salads.

Yield: Makes 3/4 cup.

Low Fat Citrus and Peppercorn Vinaigrette

Ingredients

  • 1/2 cup grapefruit juice
  • 2 tbsp lime juice
  • 2 tbsp olive oil
  • 2 tbsp chopped chives
  • 1 tsp green peppercorns, rinsed and chopped
  • 1/2 tsp grated lemon peel, optional

Directions

  1. Whisk together all ingredients. Serve over a mixed green or vegetable salad. Dressing may be kept refrigerated for up to 48 hours.
