LUAU RIBS

These oven-baked Hawaiian-style ribs will give you a taste of the tropics. The ribs are cooked in a sweet and spicy pineapple soy sauce.

Yield: Serves 6.

LUAU RIBS

Ingredients

  • 5 lb (2.5 kg) pork back ribs
  • 1/2 tsp seasoned salt
  • 1/4 cup packed golden brown sugar
  • 2 tbsp cornstarch
  • 1 tsp ground ginger
  • 1/2 tsp salt
  • 1/4 tsp garlic powder
  • 1 can (8 oz/227 mL) crushed pineapple, undrained
  • 1/2 cup ketchup
  • 1/4 cup red wine vinegar
  • 1 tbsp soy sauce
  • 1/8 tsp hot pepper sauce

Directions

  1. Preheat oven to 350°F. Line a large rimmed baking sheet with non-stick foil.
  2. Place ribs in a single layer in prepared pan. Sprinkle both sides of ribs with seasoned salt.
  3. Bake, uncovered, for 30 minutes.
  4. Meanwhile, to prepare sauce, combine brown sugar, cornstarch, ginger, salt and garlic powder in a medium saucepan. Stir in pineapple, ketchup, vinegar, soy sauce and hot pepper sauce. Bring to a boil over medium heat, stirring constantly. Cook, stirring constantly, until thickened, about 1 - 2 minutes.
  5. Remove pan from oven. Baste ribs with half of sauce. Continue baking, basting occasionally with remaining sauce, for 1 1/4 - 1 1/2 hours or until ribs are tender and glazed. Cut into serving pieces.
