LUNCHBOX ZUCCHINI BARS

These healthy snack bars are full of zucchini, wheat bran cereal, raisins and coconut, making them a great mid-day bite for kids and adults alike.

Yield: Makes 36.

LUNCHBOX ZUCCHINI BARS

Ingredients

  • 1/2 cup salted butter, melted
  • 1/2 cup canola oil
  • 1 1/2 cups brown sugar, packed
  • 2 large eggs
  • 2 tbsp water
  • 1 tsp vanilla
  • 1 1/2 cups wheat bran cereal
  • 1 1/2 cups all-purpose flour
  • 1/2 cup whole wheat flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 2 1/2 cups shredded zucchini
  • 1 cup raisins
  • 1 cup shredded coconut

Directions

  1. Preheat oven to 350°F.
  2. Whisk together butter, oil, brown sugar, eggs, water and vanilla in a bowl until blended. Stir in bran; let stand 5 minutes.
  3. Meanwhile, combine flour, whole wheat flour, baking soda, salt, cinnamon and nutmeg; set aside.
  4. Stir zucchini into bran mixture. Add zucchini mixture to flour mixture and stir just until blended. Stir in raisins and coconut.
  5. Spoon batter into a greased 9X13 inch pan.
  6. Bake for 45 minutes or until bars test done. Cool on a rack.
