MADRAS WINGS

Give your wings a little bit of Indian flair. These grilled chicken wings are flavoured with yogurt, curry spices and lime juice.

Ingredients

  • 1/4 cup plain yogurt
  • 2 tbsp fresh lime juice
  • 1 tbsp curry powder
  • 1 tsp ground cumin
  • 1/2 tsp ground ginger
  • 1/2 tsp red pepper flakes
  • 1/2 tsp salt
  • 1/4 tsp cinnamon
  • 1/4 tsp garlic powder
  • 2 lb (1 kg) chicken wings

Directions

  1. To prepare marinade, combine all ingredients except chicken in a heavy zip-lock plastic bag. Add chicken and squeeze bag to coat chicken with marinade. Seal bag and place on a plate. Refrigerate, turning bag occasionally, for at least 2 hours or up to 24 hours.
  2. Preheat natural gas barbecue on low heat for 10 - 15 minutes.
  3. Remove chicken from marinade; discard marinade. Grill chicken on a grill topper or directly on barbecue grid, turning occasionally, until chicken is cooked through, about 40 – 45 minutes.
