MANDARIN SPINACH SALAD

Canned Mandarin oranges add sweetness and colour to this healthy spinach-packed salad. The dressing is a mixture of balsamic vinegar, honey and Dijon mustard.

Yield: Serves 4 - 6.

MANDARIN SPINACH SALAD

Ingredients

  • 2 tbsp balsamic vinegar
  • 1 tbsp honey
  • 2 tsp Dijon mustard
  • 1/8 tsp salt
  • 1/8 tsp freshly ground pepper
  • 1 tbsp oil
  • 6 cups baby spinach
  • 1 can (10 oz/284 mL) mandarin oranges, drained
  • 1/4 cup thinly sliced red onion

Directions

  1. To prepare dressing, whisk together vinegar, honey, mustard, salt and pepper until combined. Gradually whisk in oil until blended. Combine spinach, oranges and onion in a bowl. Add dressing and toss to coat.
