MAPLE GLAZED CHICKEN WITH YAMS

Ingredients

  • 1 broiler chicken (3 lb/1.5 kg)
  • Salt and freshly ground pepper
  • 1 tbsp salted butter, cut into small pieces
  • 8 cups peeled yam chunks
  • 1 tbsp canola oil
  • 1/3 cup maple syrup
  • 2 tbsp brandy

Directions

  1. Preheat oven to 425°F.
  2. Place chicken, breast side up, in a large roasting pan.
  3. Sprinkle with 1/4 tsp each salt and pepper. Dot with butter.
  4. Combine yams, oil, 1/2 tsp salt and 1/4 tsp pepper. Arrange yams around chicken.
  5. Roast for 30 minutes.
  6. Meanwhile, to prepare glaze, combine syrup, brandy and 1/2 tsp pepper.
  7. Remove pan from oven. Drizzle 1 tbsp glaze over yams and use remaining glaze for basting chicken. Baste chicken with 2 tbsp glaze. Return pan to oven.
  8. Continue roasting, stirring yams and basting chicken with remaining glaze twice during cooking, until chicken is cooked through and yams are tender, about 30 minutes. A meat thermometer inserted into chicken should register 180°F.
  9. Let chicken stand for 10 minutes before carving. Carve chicken and serve with yams.
