MAPLE GLAZED RIBS

These pork back ribs are cooked on the barbecue. Brush them with a sticky maple soy glaze for the last 10 minutes of cooking.

Yield: Serves 4.

MAPLE GLAZED RIBS

Ingredients

  • 4 lb (2 kg) pork back ribs
  • 1 cup maple syrup
  • 1/3 cup soy sauce
  • 3 tbsp rice vinegar
  • 2 cloves garlic, crushed

Directions

  1. Preheat natural gas barbecue on low heat for 10 - 15 minutes.
  2. Grill ribs over low heat on natural gas barbecue for 1 hour, turning several times, until meat is almost tender.
  3. Meanwhile, combine all remaining ingredients in a small saucepan. Place saucepan on a side burner or directly on barbecue grid. Bring mixture to a boil, reduce heat and simmer until mixture is thickened and reduced by half.
  4. Brush sauce over ribs. Continue grilling for 10 minutes, turning and basting with sauce until meat is tender and richly glazed. Cut into serving pieces
