MAPLE MUSTARD SALMON

Maple works so wonderfully with salmon and a touch of Dijon mustard. This delicious dish cooks up quickly on the barbecue in a foil packet.

Yield: Serves 6.

MAPLE MUSTARD SALMON

Ingredients

  • 1/4 cup maple syrup
  • 1/4 cup Dijon mustard
  • 1 tbsp balsamic vinegar
  • 1/4 tsp salt
  • 1/4 tsp freshly ground pepper
  • 2 lb salmon fillet

Directions

  1. Combine all ingredients except salmon in a double plastic bag. Reserve 2 tbsp marinade; set aside. Add salmon to bag and squeeze bag to coat salmon with marinade; seal bag. Let stand 20 minutes.
  2. Remove salmon from marinade; discard marinade. Place salmon, skin side down, on a piece of foil. Trim foil so it is slightly larger than fillet.
  3. With lid down, cook salmon over medium heat on natural gas barbecue for 10 - 12 minutes per inch of thickness or until fish flakes easily with a fork. Baste occasionally with reserved marinade.
