MAPLE SCONES

Sweeten your classic cream scones with flavourful maple syrup. For some extra kick, serve these scones with butter and our hot sauce-spiked Spicy Maple Butter.

Yield: Makes 8.

MAPLE SCONES

Ingredients

  • 3 cups all-purpose flour
  • 1/4 cup packed brown sugar
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 3/4 cup salted butter, chilled and cubed
  • 1/2 cup whipping cream
  • 1/2 cup maple syrup
  • 1/4 tsp maple extract
  • Spicy Maple Butter*

Directions

  1. Preheat oven to 375°F.
  2. Combine flour, brown sugar, baking powder, soda and salt in a bowl. Cut in butter with a pastry blender until mixture resembles a coarse meal.
  3. Stir together cream, syrup and maple extract. Add cream mixture to flour mixture, stirring just until combined.
  4. Turn dough out onto a lightly floured surface. Knead dough 5 times. Dough will be slightly sticky. Using floured hands, pat into an 8 inch round. Cut dough into 8 wedges. Place wedges 2 inches apart on an ungreased cookie sheet.
  5. Bake until light golden, about 20 - 25 minutes. Cool on racks. May be stored into a cool dry place for up to 24 hours or frozen for up to 1 month. Serve with Spicy Maple Butter.

Tip:

If a pastry cutter is unavailable, butter may be rubbed in with cold fingers until mixture resembles coarse meal.

SPICY MAPLE BUTTER

Ingredients

  • 1/2 cup salted butter, softened
  • 2 tbsp maple syrup
  • 1/4 tsp hot pepper sauce

Directions

  1. Combine all ingredients in a small bowl until smooth.
