MASHED POTATOES WITH BRIE

Stir some brie cheese into your mashed potatoes for an extra creamy version of the classic side dish.

Yield: Serves 8.

MASHED POTATOES WITH BRIE

Ingredients

  • 8 cups cubed peeled russet potatoes
  • 2 cloves garlic, peeled
  • 1/2 cup hot milk (2%)
  • 1/4 cup salted butter
  • 1/2 tsp thyme, crumbled
  • 1/4 tsp nutmeg
  • 1/4 tsp salt
  • 1/8 tsp cayenne pepper
  • 8 oz (250 g) brie cheese, rind removed, cubed

Directions

  1. Cook potatoes and garlic in boiling salted water until tender; drain.
  2. Add hot milk, butter, thyme, nutmeg, salt and cayenne pepper to cooked potatoes.
  3. Mash with a potato masher until smooth. Stir in brie until almost melted.
