MEDITERRANEAN WRAPS

Get all the flavour of a Greek salad in a wrap sandwich. These rolled tortillas are filled with cucumber, tomato and our tangy Feta Filling.

Yield: Serves 6.

MEDITERRANEAN WRAPS

Ingredients

  • Feta Filling (recipe below)
  • 6 flour tortillas (10 inch/25 cm)
  • 12 lettuce leaves
  • 1 cup thinly sliced English cucumber
  • 1 cup thinly sliced red bell pepper
  • 1 cup thinly sliced tomato
  • 1/2 cup thinly sliced red onion

Directions

  1. Spread Feta Filling evenly over one side of each tortilla, leaving a 2 inch border.
  2. Top each with lettuce, cucumber, red pepper, tomato and onion, dividing equally.
  3. Roll up tortillas to enclose filling. Serve immediately or wrap individually and refrigerate for up to 4 hours.

FETA FILLING

Ingredients

  • 1 cup crumbled feta cheese
  • 1/2 cup plain yogurt
  • 1/4 cup chopped pickled pepperoncini peppers
  • 1/4 cup chopped pitted kalamata olives
  • 2 tbsp chopped fresh parsley
  • 1 tsp fresh lemon juice
  • 1 tsp paprika
  • 1/4 tsp oregano, crumbled
  • 1/8 tsp freshly ground pepper

Yield: Makes about 1 1/4 cups.

Directions

  1. Place all ingredients in a food processor. Process just until combined; do not overprocess. May be refrigerated for up to 24 hours.
