Melon Salad with Lime and Mint

Sweet mint balanced with zesty lime and herbal mint, not to mention a touch of honey, a delicious fruit salad.

Melon Salad with Lime and Mint


  • 1/4 cup fresh lime juice
  • 2 tbsp chopped fresh mint or 1 tbsp dried mint, crumbled
  • 1 tsp grated lime peel
  • 1 tsp liquid honey
  • 1/4 tsp salt
  • 2 cups honeydew melon cubes (1 inch)
  • 2 cups cantaloupe cubes (1 inch)


  1. To prepare dressing, whisk together lime juice, mint, lime peel, honey and salt until blended.
  2. Combine honeydew and cantaloupe in a bowl. Add dressing and toss to combine. Cover and refrigerate for at least 2 hours or up to 4 hours.
