MICROWAVE BLUEBERRY JAM

There is no easier way to make jam than by zapping it for a few minutes in the microwave. This is a brilliant way to use up any leftover fresh blueberries that you may have, though frozen blueberries work just as well.

Yield: Makes 2 cups.

MICROWAVE BLUEBERRY JAM

Ingredients

  • 3 cups fresh or frozen blueberries, thawed
  • 1 1/2 cups granulated sugar
  • 1/4 cup fresh lemon juice
  • 1/2 tsp grated lemon peel
  • 1/2 tsp salted butter

Directions

  1. Place blueberries in a large microwave-safe bowl and lightly crush using a potato masher.
  2. Stir in sugar, lemon juice, lemon peel and butter.
  3. Microwave on high for 15 - 20 minutes, stirring every 2 minutes, until mixture is thick and translucent; cool.
  4. Spoon jam into a sterilized container. Cover and refrigerate for up to 2 weeks.
