This hardy couscous salad is full of Mediterranean-style ingredients like feta cheese, kalamata olives and fresh mint. Serve it alongside a Greek-inspired meal.

  • 1 1/2 cups water
  • 1/2 tsp salt
  • 3/4 cup couscous
  • 3 tbsp extra-virgin olive oil
  • 1 tbsp white wine vinegar
  • 1 red bell pepper, diced
  • 1/2 cup slivered fresh mint
  • 1/2 cup shredded feta cheese
  • 1/3 cup kalamata olives, pitted and halved
  • 1/2 tsp freshly ground pepper


  1. In a medium saucepan, bring water and salt to a boil over medium heat; stir in couscous. Remove from heat, cover and let stand 5 minutes.
  2. Transfer couscous to a bowl and fluff with a fork.
  3. Stir in oil and vinegar; cool to room temperature.
  4. Stir in red pepper, mint, feta cheese, olives and pepper. Serve immediately or cover and refrigerate for up to 4 hours.
