MINTED MOROCCAN WET RUB

This rub is a deliciously fragrant blend of fresh mint, parsley, garlic and spices. Use it as a rub on chicken or lamb to create a Moroccan-inspired meal.

Yield: Makes 3/4 cups.

MINTED MOROCCAN WET RUB

Ingredients

  • 1/2 cup coarsely chopped fresh parsley
  • 1/4 cup fresh mint leaves
  • 1/4 cup canola oil
  • 2 tbsp red wine vinegar
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/2 tsp freshly ground pepper
  • 1/8 tsp cayenne pepper
  • 4 cloves garlic, peeled

Directions

  1. Place all ingredients in a mini food processor; process until smooth.
  2. Cover and refrigerate for up to 2 days.
  3. Use as a rub on chicken or lamb.
