MOROCCAN ZUCCHINI SAUTE
            Ingredients
- 1 tbsp olive oil
 - 1/2 cup finely chopped onion
 - 2 cloves garlic, finely chopped
 - 1/2 tsp ground cumin
 - 1/4 tsp salt
 - 1/8 tsp cayenne pepper
 - 4 cups sliced zucchini (1/2 inch)
 - 1 1/4 cups diced Roma tomatoes
 - 2 tbsp fresh lemon juice
 
Directions
- Heat oil in a large frypan over medium heat. Add onion and garlic; saute until softened, about 5 minutes.
 - Add cumin, salt and cayenne pepper; cook, stirring, for 1 minute. Add zucchini and saute until tender crisp, about 5 minutes. Add tomatoes and saute for 3 - 4 minutes or until tomatoes are softened.
 - Stir in lemon juice and cook for 1 minute. Serve immediately.
