MUSHROOM FRIED RICE

Mushrooms add rich flavour to this Asian-style fried rice. Serve it as a side dish with Chinese-inspired fare or your favourite grilled meat.

Yield: Serves 8.

MUSHROOM FRIED RICE

Ingredients

  • 1/2 lb (250 g) mushrooms, sliced
  • 2 tbsp salted butter or canola oil
  • 2 tbsp soy sauce
  • 4 cups cooked rice
  • 1/2 tsp granulated sugar
  • 3 green onions, diagonally sliced

Directions

  1. Preheat natural gas barbecue on medium heat for 10 - 15 minutes.
  2. In a cast iron frypan, sauté mushrooms in butter over natural barbecue until tender.
  3. Stir in soy sauce, rice and sugar. Heat just to serving temperature; toss with green onions.
