MUSTARD GLAZED GRILLED SALMON

This salmon cooks on top of a piece of foil right on your barbecue grill. The glaze is a flavourful blend of mustard, brown sugar, lemon and dill.

Yield: Serves 6.

MUSTARD GLAZED GRILLED SALMON

Ingredients

  • 1/4 cup mayonnaise
  • 2 tbsp coarse grain Dijon mustard
  • 2 tsp packed brown sugar
  • 2 tsp fresh lemon juice
  • 1/2 tsp dill weed
  • 1/4 tsp freshly ground pepper
  • 2 lb (1 kg) salmon fillet

Directions

  1. Preheat natural gas barbecue on medium heat for 10 - 15 minutes.
  2. To prepare glaze, combine all ingredients except salmon in a small bowl.
  3. Place salmon, skin side down, on a piece of foil. Trim foil so it is slightly larger than fillet. Spread glaze over salmon.
  4. With lid down, cook salmon over medium heat on natural gas barbecue until fish flakes easily with a fork, about 10 - 12 minutes per inch of thickness.
