MUSTARD ROASTED POTATOES

These crispy roasted potatoes get a flavour boost from a combination of Dijon mustard, lemon juice, rosemary and garlic.

MUSTARD ROASTED POTATOES

Ingredients

  • 1/3 cup Dijon mustard
  • 1/4 cup extra-virgin olive oil
  • 2 tbsp dry white wine or fresh lemon juice
  • 1 tsp rosemary, crumbled
  • 1/2 tsp freshly ground pepper
  • 1/4 tsp salt
  • 2 cloves garlic, finely chopped
  • 7 cups cubed red potatoes

Directions

  1. Preheat oven to 400°F.
  2. In a bowl, whisk together all ingredients except potatoes.
  3. Add potatoes and toss to coat with mustard mixture.
  4. Place potatoes in a single layer in a parchment paper or nonstick foil-lined jelly-roll pan.
  5. Bake, stirring occasionally, for 50 - 60 minutes or until potatoes are tender and browned.
