MUSTARD SPICED SALMON

Give your barbecued salmon a flavour boost by brushing it with a tasty mixture of mustard, coriander, ginger and garlic.

Yield: Serves 4.

MUSTARD SPICED SALMON

Ingredients

  • 2 tbsp Dijon mustard
  • 2 tbsp packed golden brown sugar
  • 1/4 tsp ground coriander
  • 1/4 tsp ground ginger
  • 1/4 tsp freshly ground pepper
  • 1/8 tsp salt
  • 1 clove garlic, crushed
  • 4 salmon steaks, 1 inch thick
  • Canola Oil*

Directions

  1. Preheat natural gas barbecue on medium heat for 10 - 15 minutes.
  2. Combine mustard, brown sugar, coriander, ginger, pepper, salt and garlic.
  3. Brush both sides of salmon with oil.
  4. Grill salmon over medium heat on natural gas barbecue for 5 minutes, turning once to sear both sides.
  5. Brush top of salmon with mustard mixture and continue cooking for 5 - 7 minutes or until fish flakes easily with a fork.
