These Ukrainian cheese crepes are flavoured with fresh dill, then baked and served with a rich cream sauce. Traditionally served on holidays and special occasions, these delicious savoury crepes are so good you will want them more often.

Ingredients
- 4 large eggs
- 1 cup milk (2%)
- 6 tbsp water
- 1 1/4 cup all-purpose flour
- 2 tsp granulated sugar
- 1/2 tsp salt
- Melted salted butter*
- Cottage Cheese and Dill Filling, recipe follows
- 1 cup whipping cream, heated
- Warm Dill Sauce, recipe follows
Directions
- In a medium bowl, beat eggs until light and fluffy.
- Gradually add milk, water, flour, sugar and salt, beating until smooth. Batter will be thin.
- Heat a large nonstick frypan over medium heat, brush with melted butter, and pour in 2 tbsp portions of batter to make thin crepes about 4 inches in diameter.
- Fry crepes until lightly browned on one side, about one minute; do not turn over. Remove crepes to a plate. Continue making crepes until all the batter is gone, buttering the pan lightly each time.
- Preheat oven to 350°F. Butter bottom and sides of a 9X13 inch baking dish.
- Place one crepe with browned side down. Put about 1 tbsp of filling on one edge of crepe. Roll to enclose filling, tucking in sides as you roll. Place into prepared baking dish.
- Continue to make rolls, placing side by side into baking dish. Lay the second layer on top, placing rolls in opposite direction.
- Bake for 25 minutes. Pour hot cream over rolls and continue to bake until cream is thick and bubbly, about 25 minutes.
- Serve with sour cream, yogurt, or Warm Dill Sauce.

Tip:
To freeze these, place filled crepes in a buttered foil pan without the hot cream and wrap well.
Cottage Cheese and Dill Filling
Ingredients
- 2 cups dry cottage cheese
- 1 egg
- 2 tbsp whipping cream
- 1 tbsp chopped fresh dill
- 1 tbsp thinly sliced green onion, optional
- 1/4 tsp salt
- 1/4 tsp white pepper
Yield: Makes 2 cups
Directions
- In a bowl, mash cottage cheese with a fork; add egg, cream, dill, green onion, salt and pepper and mix well.
Warm Dill Sauce
Ingredients
- 2 tbsp salted butter
- 1/4 cup finely chopped onion
- 1 cup whipping cream
- 1 tbsp chopped fresh dill
Yield: Makes 3/4 cup
Directions
- Melt butter in a medium saucepan over medium-high heat.
- Add onion and sauté until onions are soft and translucent, about 8 minutes.
- Add whipping cream, bring to a light boil, reduce heat and simmer 15 minutes or until sauce thickens. Stir in dill.
- Pour over Nalysnyky and serve.
