No Drippings Needed Gravy

When you feel like gravy but didn’t make a roast (or made one that was short on drippings), this recipe will give you what you need.

 

 

Yield: Makes about 3 1/4 cups.

No Drippings Needed Gravy

Ingredients

  • ​4 cups turkey or chicken stock
  • 3 sprigs fresh thyme
  • 1 sprig fresh rosemary
  • 1 sprig fresh sage
  • 1/2 cup butter
  • 1/2 cup flour
  • 2 tbsp soy sauce
  • 2 tsp white wine vinegar
  • 1/4 tsp freshly ground pepper

Directions

  1. ​Heat stock to simmering and add thyme, rosemary and sage; keep warm. Meanwhile, melt butter in a medium nonstick saucepan over medium heat until bubbly. Add flour and cook, stirring, until flour mixture is browned, about 10 minutes. Remove from heat and cool for 2 minutes.
  2. Remove and discard thyme, rosemary and sage from hot stock. Gradually whisk 2 cups hot stock into butter mixture, whisking until thickened and smooth. Add remaining hot stock, whisking until smooth. Whisk in soy sauce, vinegar and pepper.
  3. Return mixture to medium heat. Bring to a boil. Reduce heat and simmer, stirring frequently, until thickened, about 15 minutes.

Tip: If desired, 4 cups (1 L) chicken broth may be substituted for the turkey or chicken stock in this recipe. If fresh thyme, rosemary and sage are unavailable, finished gravy may be seasoned to taste with poultry seasoning.
