OATMEAL AND WHITE CHOCOLATE CHIP COOKIES

White chocolate chips give these traditional oatmeal cookies a new twist.

Yield: Makes about 5 dozen cookies.

OATMEAL AND WHITE CHOCOLATE CHIP COOKIES

Ingredients

  • 2 cups flour
  • 1 1/2 cups old-fashioned rolled oats
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 cup butter, softened
  • 1 cup sugar
  • 1 cup packed golden brown sugar
  • 2 eggs
  • 2 tsp vanilla
  • 2 cups white chocolate chips
  • 1 cup chopped pecans or walnuts

Directions

  1. Combine flour, oats, baking powder, baking soda and salt in a bowl; set aside.
  2. Using medium speed of an electric mixer, beat together butter, sugar and brown sugar until fluffy. Beat in eggs, one at a time, until blended. Beat in vanilla.
  3. Stir in flour mixture just until blended. Stir in white chocolate chips and pecans.
  4. Drop 1 tbsp measures of dough 2 inches apart onto greased cookie sheets.
  5. Bake at 350°F for 12 - 14 minutes or until light golden brown around edges
  6. Let cookies stand for 1 minute on cookie sheets. Remove from cookie sheets and cool cookies on racks.
  7. Store in an airtight container for up to 4 days. May be frozen.
