OLD FASHIONED CHERRY POUND CAKE

This buttery loaf cake is made with candied cherries. Keep a loaf on hand during the holiday season for when guests drop by for coffee.

Yield: Makes 1 loaf.

OLD FASHIONED CHERRY POUND CAKE

Ingredients

  • 1 cup salted butter, softened
  • 3/4 cup berry sugar
  • 3 large eggs, well beaten
  • 3 cups flour, divided
  • 1 1/2 cups candied cherries, halved
  • 1/2 tsp salt
  • 2 tsp baking powder
  • 1/2 cup milk (2%)

Directions

  1. Cream butter and sugar thoroughly.
  2. Add eggs and mix well. Sprinkle 1/4 cup flour over cherries; add salt and baking powder to remaining flour.
  3. Add flour mixture to butter mixture alternately with milk. Fold in floured cherries.
  4. Bake in a greased loaf pan at 350°F until a cake tester inserted into the centre comes out clean, about 65 minutes.
  5. Cool thoroughly before wrapping. Store at room temperature for 2 weeks or freeze for up to 3 months.
