ORANGE OAT BRAN MUFFINS

These brightly flavoured muffins make for a quick breakfast on-the-go or a wholesome mid-day snack.

Yield: Makes 9 muffins.

ORANGE OAT BRAN MUFFINS

Ingredients

  • 1 cup (250 mL) flour
  • 1/2 cup (125 mL) oat bran
  • 1/4 cup (50 mL) sugar
  • 1 tsp (5 mL) baking powder
  • 1/2 tsp (2 mL) baking soda
  • 1/2 tsp (2 mL) salt
  • 1/2 tsp (2 mL) cinnamon
  • 1/2 tsp (2 mL) ginger
  • 1/2 cup (125 mL) orange juice
  • 1/4 cup (50 mL) oil
  • 1 egg
  • 1 tsp (5 mL) grated orange peel

Directions

  1. Combine first 8 ingredients (flour through ginger) in a bowl; set aside.
  2. Whisk together orange juice, oil, egg and orange peel; add to flour mixture, stirring just until blended.
  3. Spoon batter into paper-lined muffin cups. Bake at 375°F (190°C) for 20 minutes.
  4. Cool slightly before serving.
