ORANGE OAT BRAN MUFFINS
These brightly flavoured muffins make for a quick breakfast on-the-go or a wholesome mid-day snack.

ORANGE OAT BRAN MUFFINS
Ingredients
- 1 cup (250 mL) flour
- 1/2 cup (125 mL) oat bran
- 1/4 cup (50 mL) sugar
- 1 tsp (5 mL) baking powder
- 1/2 tsp (2 mL) baking soda
- 1/2 tsp (2 mL) salt
- 1/2 tsp (2 mL) cinnamon
- 1/2 tsp (2 mL) ginger
- 1/2 cup (125 mL) orange juice
- 1/4 cup (50 mL) oil
- 1 egg
- 1 tsp (5 mL) grated orange peel
Directions
- Combine first 8 ingredients (flour through ginger) in a bowl; set aside.
- Whisk together orange juice, oil, egg and orange peel; add to flour mixture, stirring just until blended.
- Spoon batter into paper-lined muffin cups. Bake at 375°F (190°C) for 20 minutes.
- Cool slightly before serving.
