Oven-Roasted Trout with Citrus Green Beans

Trout doesn’t get the credit it deserves. It’s tender and rich in flavour. Adding trimmed green beans right to the pan makes this a one pot meal that can be enjoyed at home or at the lake.

Oven-Roasted Trout with Citrus Green Beans

Ingredients

  • 1 whole trout, dressed (about 1¼ lb/0.625 kg)
  • 1 tsp salt
  • 1/2 tsp freshly ground pepper
  • 1/4 cup all-purpose flour
  • 1 tbsp canola oil
  • 1 tbsp salted butter, divided
  • 1 1/2 cups sliced trimmed green beans (1 inch)
  • 1/4 cup chopped fresh Italian parsley
  • 3 tbsp fresh lemon juice

Directions

  1. Preheat oven to 375°F.
  2. Season trout and cavity with salt and pepper. Dredge trout in flour; shake off excess.
  3. Heat oil and 1/2 tbsp butter in an oven-safe large frypan over medium heat. Sear trout until bottom is golden brown, about 5 minutes. Flip trout and transfer pan to oven. Bake for 8 minutes. Flip trout and continue to bake until trout flakes easily with a fork, about 5 minutes. Remove pan from oven. Using tongs, open trout cavity and pull out bones.
  4. Return trout to pan and return pan to medium heat. Add remaining butter and stir until melted. Add green beans and sauté until tender-crisp, about 2 minutes. Stir in parsley and lemon juice.

Tip: Look for dressed trout in the seafood section at the grocery store. If preparing fresh trout, remove the head, fins and tail. Remove entrails and any remaining internal organs. Rinse the cavity with cold water.
