Parmesan Vegetables

Mix up your vegetable routine with sharp Parmesan cheese.

Parmesan Vegetables

Ingredients

  • 1 medium zucchini, thickly sliced
  • 1 cup snow peas or small cauliflower florets
  • 1 red bell pepper, cut into chunks
  • 1 green bell pepper, cut into chunks
  • 1 small onion, cut into wedges
  • 1 tbsp olive oil
  • 1 tbsp grated Parmesan cheese
  • 1/2 tsp oregano, crumbled
  • 1/4 tsp salt
  • Dash freshly ground pepper

Directions

  1. Combine all ingredients. Place mixture in a lightly greased grill wok. Cook over medium heat on natural gas barbecue, stirring occasionally until vegetables are tender, about 15 - 20 minutes.
  2. Vegetables may also be cooked on a grill topper or in a heavy frypan.
