PENNE ALLA VODKA

This pasta is easy enough to whip up on a weeknight, but impressive enough to serve to guests. There is indeed vodka in the sauce, along with tomatoes, whipping cream and Parmesan cheese.

PENNE ALLA VODKA

Ingredients

  • 1 cup finely chopped onion
  • 3 cloves garlic, finely chopped
  • 1/2 tsp salt
  • 1/4 tsp freshly ground pepper
  • 1/4 tsp red pepper flakes
  • 2 tbsp olive oil
  • 2/3 cup vodka
  • 1 can (14 oz) crushed tomatoes
  • 1 cup whipping cream
  • 16 oz penne pasta, cooked and drained
  • 2 tbsp chopped fresh parsley
  • Freshly grated Parmesan cheese

Directions

  1. To prepare sauce, sauté onion, garlic, salt, pepper and red pepper flakes in oil for 5 minutes.
  2. Stir in vodka and simmer 2 minutes. Add tomatoes and cream. Simmer gently over low heat for 5 minutes.
  3. Place hot cooked pasta in a bowl and toss with sauce.
  4. Sprinkle with parsley. Serve with Parmesan cheese. Serve immediately.
