POLENTA WITH BLUE CHEESE AND WALNUTS

This creamy polenta is full of tangy blue cheese and earthy walnuts. Serve it as a comforting side dish or a vegetarian entrée.

Yield: Serves 6.

POLENTA WITH BLUE CHEESE AND WALNUTS

Ingredients

  • 4 cups (1 L) milk
  • 1/2 cup whipping cream
  • 1/2 tsp salt
  • 1 cup corn grits
  • 1 1/4 cups crumbled blue cheese
  • 1/4 cup coarsely chopped toasted walnuts
  • 1 tbsp chopped fresh parsley
  • 1/2 tsp freshly ground pepper

Directions

  1. Combine milk, cream and salt in a large saucepan and bring to a boil. Gradually whisk in corn grits.
  2. Reduce heat to low; cook, whisking frequently, until mixture is thick and creamy, about 20 minutes.
  3. Spoon into a greased shallow 2 quart (2 L) broiler-proof baking dish.
  4. Sprinkle cheese over polenta. Broil until cheese is lightly browned and heated through.
  5. Sprinkle with walnuts, parsley and pepper. Serve immediately.

Tip: Corn grits, also know as polenta, can be found in Italian grocery stores or the organic section of grocery stores. We used Bob's Red Mill Corn Grits in this recipe.
