POTATO AND SMOKED GOUDA SOUP
Ingredients
- 1 tbsp salted butter
- 1 tsp canola oil
- 1 1/2 cups chopped onions
- 1 cup chopped celery
- 3/4 cup chopped carrot
- 5 cloves garlic, finely chopped
- 5 cups cubed peeled yellow potatoes (1 inch)
- 6 cups no-salt-added chicken broth
- 1 cup shredded smoked Gouda cheese
- 1/2 cup milk (2%)
- 1 tsp salt
- 1/2 tsp freshly ground pepper
- 1/2 tsp turmeric
- Toppings: Shredded smoked Gouda cheese, sliced green onion and smoked paprika*
Directions
- Melt butter with oil in a Dutch oven over medium heat. Add onions, celery, carrot and garlic; sauté until softened, about 5 minutes.
- Add potatoes and broth; stir to combine. Bring to a boil.
- Reduce heat and simmer, uncovered, stirring occasionally, for 30 minutes.
- Stir in 1 cup cheese, milk, salt, pepper and turmeric; cook, stirring, for 4 minutes. Remove from heat.
- Using a hand blender, purée mixture until smooth.
- Serve topped with toppings.
