Prize Apricot Jam

Get a taste of the tropics every morning with our Prize Apricot Jam where we combined apricots with pineapple and oranges. Yum!

 

Yield: Makes about 8 cups (2 L)

Prize Apricot Jam

Ingredients

  • 8 cups (2 L) quartered pitted apricots
  • 4 1/2 cups (1.125 L) sugar
  • 3/4 cup (175 mL) packed brown sugar
  • Juice and grated peel of 1 orange
  • 1 cup (250 mL) crushed pineapple, with juice
  • 1/8 tsp (0.5 mL) salt

Directions

  1. Cut apricots into 1/2 inch (1.25 cm) pieces. Combine all ingredients in a Dutch oven. Bring to a boil. Cook, stirring frequently until thick, about 30 minutes. Pour into hot sterilized jars, leaving 1/4 inch (6 mm) headspace. Wipe jar rims thoroughly. Seal and process in a boiling water bath for 10 minutes.
