PUMPKIN PIE

We all need a classic pumpkin pie recipe in our recipe box. This version is perfect for Christmas or Thanksgiving dinner.

Yield: Serves 8

PUMPKIN PIE

Ingredients

  • 2 large eggs, slightly beaten
  • 1 3/4 cups unsweetened pumpkin purée
  • 3/4 cup granulated sugar
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1/2 tsp ground ginger
  • 1/4 tsp ground cloves
  • 1 can (354 mL) evaporated milk or 1 1/2 cups light cream (10%)
  • 9 inch unbaked pastry shell

Directions

  1. Preheat oven to 425ºF.
  2. Combine all ingredients except pastry shell.
  3. Pour mixture into pastry shell. Bake for 15 minutes.
  4. Reduce temperature to 350ºF and continue baking 45 minutes or until knife inserted in centre comes out clean.
  5. Let cool before serving.
