QUICK ZUCCHINI SOUP
Ingredients
- 3 cups quartered and thinly sliced zucchini
- 1/2 tsp salt
- 1 medium onion, chopped
- 2 tsp oil
- 4 cups chicken stock
- 2 tbsp chopped fresh parsley
- 1 cup chopped seeded tomatoes
- 1/4 tsp savory, crumbled
- 1/4 tsp thyme, crumbled
- 1/4 tsp basil, crumbled
- 1/4 tsp pepper
Directions
- In a medium saucepan, sauté zucchini, salt and onion in oil for 5 minutes. Stir in remaining ingredients (stock through pepper). Simmer 10 - 15 minutes or until vegetables are tender. Serve with whole wheat buns and a crisp salad.
