QUICK ZUCCHINI SOUP

Zucchini is a great basis for this light and summery soup.

Yield: Serves 6.

QUICK ZUCCHINI SOUP

Ingredients

  • 3 cups quartered and thinly sliced zucchini
  • 1/2 tsp salt
  • 1 medium onion, chopped
  • 2 tsp oil
  • 4 cups chicken stock
  • 2 tbsp chopped fresh parsley
  • 1 cup chopped seeded tomatoes
  • 1/4 tsp savory, crumbled
  • 1/4 tsp thyme, crumbled
  • 1/4 tsp basil, crumbled
  • 1/4 tsp pepper

Directions

  1. In a medium saucepan, sauté zucchini, salt and onion in oil for 5 minutes. Stir in remaining ingredients (stock through pepper). Simmer 10 - 15 minutes or until vegetables are tender. Serve with whole wheat buns and a crisp salad.
