QUINOA AND TURKEY SAUSAGE BAKE

Quinoa is not only delicious, but also packed with nutrients. This one-dish meal combines quinoa with turkey sausages, fresh vegetables and a little bit of spice.

Yield: Serves 6.

QUINOA AND TURKEY SAUSAGE BAKE

Ingredients

  • ​1 lb (0.5 kg) turkey sausages, casings removed
  • 1 cup diced onion
  • 1 tsp canola oil
  • 1 tsp chili powder
  • 2 cloves garlic, finely chopped
  • 1 cup chicken broth
  • 1 cup quinoa, thoroughly rinsed and drained
  • 1 cup diced red bell pepper
  • 1 cup diced tomatoes
  • 1/2 cup diced celery
  • 1/2 cup tomato juice
  • 1 tbsp Italian seasoning
  • 1 tsp Louisiana-style hot sauce
  • 1/2 tsp salt
  • Chopped fresh parsley

Directions

  1. Preheat oven to 350°F.
  2. Place sausages in a Dutch oven over medium heat. Cook, stirring to break up sausages, until browned. Add onion, oil, chili powder and garlic; sauté until onion is softened, about 5 minutes. Remove from heat.
  3. Add broth, quinoa, red pepper, tomatoes, celery, tomato juice, Italian seasoning, hot sauce and salt; stir to combine. Spoon mixture into a greased 2 quart baking dish.
  4. Bake, covered, for 45 minutes or until quinoa is tender and liquid is absorbed. Sprinkle with parsley.
