RADISH AND ORANGE SALAD
This pretty side salad combines orange slices with radishes, baby spinach, walnuts and a slightly spicy citrus dressing. Serve it at dinner as an alternative to a traditional green salad.

RADISH AND ORANGE SALAD
Ingredients
- 1/4 cup (50 mL) fresh lemon juice
- 2 tbsp (25 mL) orange juice
- 2 tsp (10 mL) sugar
- 1 tsp (5 mL) cinnamon
- 1/2 tsp (2 mL) ground cumin
- 1/4 tsp (1 mL) salt
- 1/8 tsp (0.5 mL) cayenne pepper
- 1/3 cup (75 mL) oil
- 8 cups (2 L) baby spinach
- 1 cup (250 mL) thinly sliced radishes
- 3 medium navel oranges, peeled and sliced
- 1/3 cup (75 mL) chopped toasted walnuts
Directions
- To prepare dressing, whisk together first 7 ingredients (lemon juice through cayenne pepper) until combined.
- Gradually whisk in oil until blended.
- Combine spinach, radishes, oranges and walnuts in a bowl.
- Add dressing and toss to coat. Serve immediately.
