RADISH AND ORANGE SALAD

This pretty side salad combines orange slices with radishes, baby spinach, walnuts and a slightly spicy citrus dressing. Serve it at dinner as an alternative to a traditional green salad.

RADISH AND ORANGE SALAD

Ingredients

  • 1/4 cup (50 mL) fresh lemon juice
  • 2 tbsp (25 mL) orange juice
  • 2 tsp (10 mL) sugar
  • 1 tsp (5 mL) cinnamon
  • 1/2 tsp (2 mL) ground cumin
  • 1/4 tsp (1 mL) salt
  • 1/8 tsp (0.5 mL) cayenne pepper
  • 1/3 cup (75 mL) oil
  • 8 cups (2 L) baby spinach
  • 1 cup (250 mL) thinly sliced radishes
  • 3 medium navel oranges, peeled and sliced
  • 1/3 cup (75 mL) chopped toasted walnuts

Directions

  1. To prepare dressing, whisk together first 7 ingredients (lemon juice through cayenne pepper) until combined.
  2. Gradually whisk in oil until blended.
  3. Combine spinach, radishes, oranges and walnuts in a bowl.
  4. Add dressing and toss to coat. Serve immediately.
