RAINBOW CHOCOLATE CHIP BARS

Chocolate chip cookie bars are much quicker to make than individual cookies. We give these bars some colourful flair with the addition of candy-coated chocolate pieces.

Yield: Makes 48.

RAINBOW CHOCOLATE CHIP BARS

Ingredients

  • 1 1/2 cups flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup butter, softened
  • 3/4 cup sugar
  • 3/4 cup packed golden brown sugar
  • 2 eggs
  • 1 tsp vanilla
  • 1 cup miniature candy-coated chocolate pieces
  • 1 cup semi-sweet chocolate chips
  • 1/3 cup miniature candy-coated chocolate pieces

Directions

  1. Combine flour, baking powder and salt in a bowl; set aside.
  2. Using medium speed of an electric mixer, beat together butter, sugar and brown sugar until fluffy.
  3. Beat in eggs, one at a time, until blended. Beat in vanilla. Stir in flour mixture just until blended. Stir in 1 cup candy-coated chocolate pieces and chocolate chips.
  4. Spoon into a greased 9x13 inch baking pan. Sprinkle with 1/3 cup candy-coated chocolate pieces.
  5. Bake at 350ºF for 30 - 35 minutes or until golden brown and a cake tester inserted in centre comes out clean.
  6. Cool completely in pan on a rack. Cut into bars.
