Ras el Hanout Rubbed Cod

Ras el hanout is a Moroccan spice blend used in many different dishes which gives a delicious warm flavour. 

Yield: Serves 4

Ras el Hanout Rubbed Cod

Ingredients

  • 1/4 cup salted butter, softened
  • 1 tsp Ras el Hanout Spice Blend
  • 1/4 cup fresh lemon juice*
  • 4 cod fillets (about 7 oz/200 g each)
  • 4 lemon wedges*

Directions

  1. Combine butter and Ras el Hanout Spice Blend in a bowl; set aside.
  2. Pour lemon juice into a large heavy zip-lock plastic bag.
  3. Add cod and squeeze bag to coat cod with lemon juice; seal bag. Let stand for 5 minutes. Remove cod from lemon juice; discard lemon juice.
  4. Brush butter mixture over both sides of cod fillets.
  5. Grill cod over medium-high heat on natural gas barbecue until cod flakes easily with a fork, about 3 minutes per side. Remove from heat.
  6. Sprinkle with green onions. Serve each fillet with 1 lemon wedge.
