RED CABBAGE AND APPLE SLAW

This pretty cabbage salad is studded with crisp apples, crunchy pecans and dried cranberries. It makes for a nice side dish during the holidays.

Yield: Serves 10.

RED CABBAGE AND APPLE SLAW

Ingredients

  • 1/3 cup red wine vinegar
  • 1/3 cup sugar
  • 1/2 tsp salt
  • 1/2 tsp freshly ground pepper
  • 1/4 cup oil
  • 8 cups thinly sliced red cabbage
  • 4 cups cubed Red Delicious apples
  • 3/4 cup dried cranberries
  • 1/2 cup toasted pecan halves

Directions

  1. To prepare dressing, whisk together vinegar, sugar, salt and pepper until combined. Gradually whisk in oil until blended.
  2. Combine cabbage, apples, cranberries and pecans in a bowl. Toss with dressing to combine. Serve immediately.
