Make a homemade rhubarb syrup for these impressive homemade non-alcoholic cocktails. Add gin or vodka for a boozy version.

Yield: Serves 6.



  • 6 cups sliced rhubarb
  • 2 cups water
  • 1 cup granulated sugar
  • 1 tbsp fresh lemon juice
  • Crushed ice
  • 2 cups gingerale


  1. Combine rhubarb, water, sugar and lemon juice in a saucepan. Bring to a boil over medium heat.
  2. Reduce heat and simmer until rhubarb is tender, about 15 minutes.
  3. Strain mixture and reserve syrup; discard rhubarb. Chill syrup. Just before serving, pour syrup over ice and add gingerale.
